Rainbow Quinoa Salad with Lemon-Tahini Dressing
Why it’s great: Packed with fiber, plant-based protein, antioxidants, and healthy fats. Perfect as a main or a side.
Ingredients:

1 cup quinoa (rinsed) ; 2 cups water ; 1/2 cup cherry tomatoes halved ; 1/2 cup cucumber, diced ; 1/4 cup red bell pepper, chopped ; 1/4 cup yellow corn (fresh or thawed if frozen) ; 1/4 cup red cabbage, shredded ; 2 tbsp chopped parsley or cilantro; 1 tbsp olive oil

For the Lemon-Tahini Dressing:

2 tbsp tahini ; 1 tbsp lemon juice ; 1 tsp maple syrup or honey ; 1 garlic clove, grated; Salt to taste ; 1–2 tbsp warm water to thin

Instructions:

1. Cook quinoa: In a pot, combine quinoa and water. Bring to a boil, then cover and simmer for 15 minutes. Fluff and cool.

2. Make the dressing: Whisk together tahini, lemon juice, garlic, maple syrup, salt, and water.

3. In a large bowl, mix the quinoa, chopped veggies, and herbs. 4. Drizzle with olive oil and the lemon-tahini dressing. Toss well. 5. Serve chilled or at room temperature.

Tip: Add chickpeas or grilled tofu for extra protein!
